At Salamanca Fresh we are excited to announce the arrival of the NEW Ashgrove Cheese Signature Range.

Like Champagne from the chalky plains of France’s Champagne region, or Roquefort aged in the caves of Roquefort-sur-Soulzon, Ashgrove Signature cheese is specific to 41 degrees latitude™. Here there lies a small, fertile pocket of Northern Tasmania.

It’s here that Ashgrove’s dairy herds have grazed since 1908, between towering bluffs and cold clear rivers. It’s here that natural rye grasses, unique to this latitude, create luxuriant pastures of emerald green. It’s here that their special breed Holstein-Friesian, Swiss Brown and Jersey cows transform them into velvety and vitamin-rich milk collected fresh daily from Ashgrove family farms. It is here that they make cheese.

Cheesemaking at the source keeps Ashgrove’s milk miles low. It’s never far from paddock to production, and their milk retains all the sweetness and body of yesteryear, when families kept their own cow and knew the joy of fresh milk.

Ashgrove Signature CurdsTurning this liquid gold into cheese is a kind of alchemy and obsession. For the Ashgrove team, it’s about pressed curds, cloth-wrapped wheels, curing on wooden planks and checking the cheese rooms a little too often. And of course, affinage, the art of guiding cheese to its full potential. These mindful methods coax out the latitude’s character; the soil, pastures, cows, climate, microbes and generations of wisdom that make Ashgrove distinctively Ashgrove.

The result is cheese with provenance, where every flavour note and nuance can be traced back to its place, its people, and its process.

The golden hue of Ashgrove’s Eddington Cheddars is thanks to a springtime flourish of carotenoid-rich grasses. The indulgent creaminess of the Cloverfield Double Gloucester is born of high-butterfat milk from healthy herds grazing next to a World Heritage wilderness. The burnt-caramel complexity of the Rubicon Red Leicester is a product of regenerative pasture management, remineralised soils and extended maturation in our cheese room.

Eddington Farm Vintage Cheddar Ashgrove SignatureEddington Farm Vintage Cheddar

Eddington Farm Vintage Cheddar celebrates their very first wheel of cheddar handcrafted in 1993. Fresh milk from Ashgrove family farms is still collected each day. This golden, nutritious milk comes from free-range cows grazing on natural ryegrasses found only at 41 degrees latitude. You can taste it in the strong, savoury but never overpowering flavours that make this cheddar distinctively Ashgrove. Aged 18-24 months on traditional wooden planks for superb complexity and the perfect crumble.

Enjoy with crimson grapes, fig & fennel bread or natural lavosh, a glass of oaky barrel-aged Chardonnay or a sweet single malt whisky.

Rubicon Farm Red Leicester celebrates Rubicon Farm, Ashgrove’s idyllic second home on the Rubicon River. These lush Tasmanian pastures produce milk abundant in nutrients and sweetness, infused with natural annatto for a ruby hue. A moist, slightly open and mild affair that showcases provenance, with a mellow nutty flavour profile and extreme creaminess.

Enjoy with muscatel or fresh apricots, Caraway seed bread or sea salt lavosh, an elegant white wine or peated whisky.

Cloverfield Farm Double Gloucester celebrates the purity of Cradle Mountain. Nestled alongside Tasmania’s most iconic World Heritage site, Cloverfield Farm benefits from spring water and cool
temperate pastures to produce velvety full cream milk. That’s what makes our firm and biteable cheese extra buttery and perfect for melting. The classic silky smooth texture complements a mellow-nutty flavour profile with a hint of orange zest.

Enjoy with pear and crimson grapes, spelt or fennel bread or rye crackers, a white Semillon or rye whiskey.
