2 tablespoons honey
4 Marion Bay Free Range Chicken Breast Fillets
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
8 strips Ziggys Freshly Sliced Rind on Bacon
Preheat oven to 220 C. Place a roasting rack inside a roasting tray.
In a small bowl, whisk the mustard and honey. Divide into two portions and set aside.
Sprinkle both sides of the chicken breasts with salt, pepper and garlic powder. Wrap each chicken breast with 2 strips of bacon and place them on the roasting rack. Brush them with half the mustard-honey sauce. Wash the basting brush thoroughly with warm soapy water.
Bake the chicken breasts for 15-20 minutes, until they are cooked fully and the bacon is browned and crispy. Remove from the oven and allow to rest, covered, for about 10 minutes.
Brush the tops with the remaining sauce and serve with salad or steamed vegetables.
