Blueberry Vanilla Ice Blocks

Refreshing and colourful, the wonderful thing about these fruity ice blocks is you can make them completely to your dietary requirements and tastes.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup water
  • 2-3 tbsp. maple syrup (or agave)
  • 1 cup vanilla yoghurt (or coconut yoghurt)
  • 1/2 cup milk / nut milk / rice milk / coconut milk / other milk of your choice
  • 1 tsp. vanilla extract

Method

  1. In a medium saucepan on medium heat, heat the blueberries, water and maple syrup until juices begin to release.
  2. Continue gently warming for 10-15 minutes or so until the mixture becomes syrupy.
  3. Set aside to cool completely.
  4. In the meantime, mix the vanilla yogurt, milk and vanilla.
  5. To assemble, drop 1 tbsp. of the yogurt mixture into the bottom of your ice block molds, then add a tablespoon of the blueberry mixture. Continue, alternating between the yogurt and the blueberry, until molds are full
  6. Freeze for 4-5 hours, or until solid.
