Homemade Hokey Pokey

Hokey Pokey is a wonderful, yet simple honeycomb style treat that's actually very popular in New Zealand! Either eat it as it is, dip in melted chocolate, or crumble it up and sprinkle over ice cream.

Ingredients

  • 1 tbs vegetable oil
  • 80g (3/8 cup) Golden Syrup
  • 2 tsp bicarbonate of soda
  • 80g butter
  • 160g (3/4 cup) caster sugar

Method

  1. Grease a 20cm cake tin with the vegetable oil.
  2. Place the butter, sugar and syrup in a large pan and heat gently until the sugar has dissolved.
  3. Turn up the heat and bring to a rapid boil, boil without stirring until the mixture turns a golden brown, this will take around 4 – 5 minutes.
  4. Add the bicarbonate of soda and stir. Be careful here because the mixture will expand and fizz.
  5. Tip the mixture into the prepared tin and leave for a few hours to set.
  6. Break into chunks and serve. You could also dip in melted chocolate or crumble up and sprinkle over ice cream.
