Ingredients

  • 2 cups self raising flour
  • 1 teaspoon baking soda (bi-carb)
  • 2 cups buttermilk (or 2 cups milk, and the juice of a lemon)
  • 1 egg

Topping suggestions:

  • Fresh berries, powdered sugar and maple syrup
  • Nutella
  • Butter
  • Bananas and caramel sauce

Method

  1. If you don’t have buttermilk, in a bowl mix together the milk and the lemon juice, this will make the milk slightly curdle. Add the egg and whisk together.
  2. In a separate bowl, whisk together the flour and Baking soda.
  3. Mix the milk into the flour mix and whisk until it’s combined. Don’t worry if it’s not completely smooth.
  4. Either use a mold, and spray with non-stick spray, or use a squeeze bottle to make heart shapes in a sprayed pan over a medium heat.
  5. Cook until bubbles begin to form on top of the batter, about 2 minutes, then remove the molds and use a spatula to flip the pancakes to the other side. Cook for 2 more minutes until the pancakes are golden brown on the other side. Transfer the pancakes to a warm plate. And cover with a clean tea towel.
  6. Serve warm with your favourite toppings.
