- 1 ripe rockmelon, cubed
- 1 lime, zest and juice
- 1 tablespoon extra virgin olive oil
- 50g Danish fetta, crumbled
- 1 tablespoon mint, freshly sliced
- salt/pepper to taste
- Place the cubed rockmelon in salad bowl and sprinkle the crumbled fetta and sliced mint on top.
- In a small bowl, mix together the lime and olive oil.
- Pour the lime and oil mixture over the rockmelon and toss all ingredients together.
- Serve immediately.
