Tiger prawns with garlic, chilli and lemon

These BBQ Prawns really are something to get fired up about. They're easy to make, delicious, healthy and ready in 30 min! Perfect for hot days when you don’t want to cook too much, with minimal prep required.

  • 50 ml extra-virgin olive oil, plus extra to drizzle
  • 12 large raw tiger prawns, head-on and shell-on
  • 2 garlic cloves, finely sliced
  • ½ red chilli, thinly sliced
  • sea salt, to taste
  • 1 tbsp flat-leaf parsley, finely chopped
  • 1–2 slices sourdough or baguette, sliced
  • ½ lemon, cut into wedges

Method

1. Heat the olive oil in a wide frying pan over high heat. Add the prawns in a single layer and cook for 1½ minutes until they begin to colour.
2. Turn the prawns, then add the garlic and chilli. Cook for a further 1–1½ minutes, tossing gently, until the prawns are just cooked through and the garlic is fragrant.
3. Remove from the heat, season lightly with sea salt and scatter over the parsley. Drizzle with a little extra olive oil.
4. Toast the bread until golden. Finish the prawns with a generous squeeze of lemon and serve immediately with the warm bread on the side.
