Autumn Apple & Rhubarb Crumble

Warming and sweet, this simple apple and rhubarb crumble is the perfect Autumn dessert. The colour of the rhubarb will brighten up the table and the apple provides a beautiful soft texture that contrasts with the crumble topping.

Ingredients

  • 1 bunch (425g) rhubarb, trimmed, cut into 2cm pieces
  • 4 Golden Delicious apples, peeled, cored and sliced
  • 2 tbls caster sugar
  • 1 tsp orange rind, finely grated
  • 2 tbls orange juice
  • 1 cup self-raising flour
  • 2/3 cup brown sugar
  • 80g butter, chilled, chopped into small pieces
  • Thickened cream or vanilla ice cream, to serve

Method

  1. Preheat oven to 180C/160C fan-forced. Grease a 1.5-litre (6-cup-capacity) ovenproof dish.
  2. Combine rhubarb, apple, caster sugar, orange rind and juice in the prepared dish.
  3. Cover and bake,stirring once, for 30 minutes or until fruit is just tender.
  4. Remove from oven.
  5. Meanwhile, combine flour and brown sugar in a large bowl. Add the butter and using your fingertips, rub butter into flour mixture until mixture resembles coarse breadcrumbs. Sprinkle over rhubarb and apple mixture.
  6. Bake, uncovered, for 25 to 30 minutes or until crumble is golden brown.
  7. Serve with thickened cream, vanilla ice cream or custard.

Note: This crumble makes a warming delicious breakfast and can be served with natural, Greek or vanilla yoghurt.
