Avocado Ice Cream

For a healthier alternative to regular ice cream that still tastes creamy and delicious, this avocado ice cream is sure to be a hit with the family. Adjust the sweetness according to your tastes with honey or sweetened condensed milk. Try serving with some chopped pistachios too.

Ingredients

  • 2 ripe avocados
  • 400ml coconut cream
  • Juice and zest of 1 lime
  • 1/4 cup honey or sweetened condensed milk

Method

  1. Cut the avocados in half and scoop out the flesh, discarding the seed.
  2. Place the flesh, coconut milk, lime juice and honey/condensed milk in a blender or food processor and blend until smooth. Taste and adjust sweetness to suit.
  3. Transfer the mixture into a loaf tin and cover with plastic wrap. Press the film down firmly on the surface of the mixture.
  4. Freeze for at least 6 hours.
