This delicious Italian dish uses premium Ziggys sausages and a colourful medley of capsicums. Enjoy on its own or stir through with your favourite pasta.

2 to 3 large onions- sliced
2 large yellow capsicums, sliced
2 large green capsicums, sliced
3 large red capsicums – sliced

1/4 cup extra virgin olive oil – divided

Preheat oven to 190 degrees C. Adjust the racks inside the oven to fit your roasting pan on the center rack.
Drizzle at least 2 tablespoons of extra virgin olive oil on the bottom of a large roasting pan. Toss in sliced onions and sliced capsicums. Add salt and garlic powder and set it aside.
Poke each sausage a few times with a fork, place in a pan, and cook on the stove at medium heat for about 5 minutes – squeeze the fresh juice of 1 lemon over the top as they cook. Remove from the heat when they are golden brown, as they will finish cooking in the oven.
Using tongs, transfer the sausages to a cutting board and cut each one into quarters. Toss them into the prepared roasting pan with onions and peppers, then drizzle more extra virgin olive oil on top.
Place roasting tray onto the middle rack inside the oven.
Bake uncovered for 1 hour. Check on them after the first 30 minutes and give them a stir to ensure the capsicums on the bottom don’t burn. Capsicums should be moist and juicy.
Remove and transfer to a serving dish. Cover with foil until ready to serve.
