Basic Beef Massaman Curry

This flavoursome curry is slow cooked and will melt in your mouth. Using your favourite Massaman Thai curry paste, you can create a hearty mid-week meal that the whole family will rave about.

  • 600g gravy beef, cubed
  • 300g small chat potatoes, halved
  • 1 brown onion, finely chopped
  • Massaman Thai curry paste (amount according to instructions)
  • 2 tbs plain flour
  • 2 cups low salt chicken or vegetable stock
  • 400ml coconut cream
  • 2 tbs fish sauce
  • 1 tbs lemon juice
  • 1 tbs brown sugar
  • 2 cups cooked rice to serve

  1. Place chopped onion and potatoes in slow cooker. Add curry paste and coconut cream and mix together.
  2. Add stock, fish sauce, lemon juice and brown sugar. Mix again.
  3. Place flour in a plastic bag, then add the cubed beef and shake until the meat is coated in flour. Add beef to slow cooker.
  4. Cook in slow cooker on low for 8 hours.
  5. Serve with rice.
