Broccoli, Cauliflower & Halloumi Fritters

These broccoli, cauliflower and halloumi fritters make an excellent choice for a healthy and filling breakfast. These fritters are also fantastic as a lunchbox filler or as a side dish to any meal. Try serving with your favourite tomato relish, or freshly made Tatziki.

  • 300g broccoli
  • 300g cauliflower
  • 1/2 cup plain flour
  • 1/2 cup self raising flour
  • 1 egg
  • 1 cup milk
  • 250g halloumi, diced into small cubes
  • Salt and pepper to season
  • Lemon sliced into wedges for serving

  1. Wash the broccoli and cauliflower and break them both into small florets
  2. Steam the florets by placing in a microwave safe bowl and heating in the microwave on high for 2 minutes.
  3. Drain the steamed florets of any excess liquid and allow to cool.
  4. In a large bowl, combine the flours, egg and milk and beat until smooth.
  5. Stir the diced halloumi into the batter. Add the cauliflower and broccoli and stir until evenly distributed. Season with salt and pepper.
  6. Spoon into hot, shallow oil and fry until a rich brown on both sides.
  7. Drain on absorbent paper and serve with a wedge of lemon.

Note: These fritters make a delicious and healthy breakfast choice, but can also be served as a side. You can also try these with your favourite tomato relish or Tatziki dip.
