Cranberry, Apple and Sage Stuffing

This modern day take on a traditional stuffing is full of flavour, adding an extra element to your Christmas turkey or chicken.

Stuffs a whole turkey


  • 9 cups day old sourdough bread, into rough crumbs.
  • 2 sticks celery, halved lengthwise and thinly sliced
  • 1 medium onion, diced
  • 1 medium granny smith apple, diced
  • 1 ½ cups dried cranberries (Craisins)
  • 2 tbsp fresh sage, roughly chopped
  • 2 tbsp parsley, finely chopped
  • 1 tbsp thyme, finely chopped
  • 1 tbsp rosemary, finely chopped
  • 1 cup unsalted butter
  • Coarse salt, freshly ground black pepper


  1. Sauté Celery and onion in olive oil, add diced apple and herbs and cook until soft.
  2. Mix with remaining ingredients, and stuff into the turkey or chicken.

Note: You could also put it onto a roasting tray or dish and cook separately.
