Hayden Quinn’s quick chorizo bolognese

This easy pasta from delicious. brings together chorizo, cherry tomatoes, herbs, and parmesan for a bowl that’s hearty, fragrant, and guaranteed to please the whole table.

Ingredients

  • 3 x 125g chorizo, casings removed and chopped

  • 1 tbsp extra virgin olive oil, plus extra to drizzle

  • 2 tbsp thyme leaves

  • 400g tomato passata

  • 400g pappardelle or other long pasta

  • 500g cherry tomatoes, halved

  • Flat-leaf parsley and grated parmesan, to serve

Method

  1. Place the chorizo in a food processor and pulse until finely chopped. Transfer to a cold frypan with the oil and place over medium heat. Once the chorizo begins to sizzle, cook for 3–4 minutes, tossing occasionally, until the fat has rendered.

  2. Add the thyme and cook for 1 minute until fragrant. Stir in the passata and cook for 6–8 minutes until slightly reduced.

  3. Meanwhile, cook the pasta according to packet instructions. Drain, reserving 1/3 cup (80ml) of the cooking liquid.

  4. Add the pasta to the sauce with the reserved cooking liquid and toss to coat. Remove from the heat. Top with cherry tomatoes, parsley, and parmesan, then finish with a drizzle of extra olive oil.
