Malteser Slice

This deliciously naughty no-bake slice makes a fantastic party treat as it can be cut into bite size pieces, or wrapped in cellophane and given as a gift.

Ingredients

  • 250g packet Arnotts Scotch Finger Biscuits
  • 2 cups Rice Bubbles
  • 280g packet Maltesers
  • 125g butter
  • 395g tin sweetened condensed milk
  • 2 tbs cocoa powder
  • 200g white chocolate (melts or block broken into pieces)
  • 2 tbs coconut oil melted (or vegetable oil/copha)

Method

  1. Line a 22cm x 32cm rectangular baking tray with baking paper.
  2. Crush biscuits in a food processor. If you don’t have food processor, place biscuits between two sheets of baking paper and crush with a rolling pin.
  3. Pour biscuits into a large bowl along with the rice bubbles and 1 cup of halved Maltesers (leave the remaining Maltesers for decorating the top of the slice).
  4. Melt the butter, condensed milk and cocoa in the microwave on low power until melted. Whisk until smooth.
  5. Pour over dry ingredients and mix until combined. Press firmly into tray.
  6. Melt the white chocolate and coconut oil in the microwave in 30 second burst on low power, stirring each time, until smooth. Pour evenly over slice.
  7. Press the remaining Maltesers into the chocolate and refrigerate until firm.

Note: This slice can be stored in the fridge in an airtight container for up to one week.
