Mango Bellini

A fun and fizzy way to bring in the New Year! Use your favourite sparkling and fresh mangoes to celebrate this summer.

  • 1/2 ripe mango
  • 100ml Sparkling wine, plus extra for topping up


1. Peel and chop the mango and put it into a blender with 100ml sparkling wine. Blend to a smooth purée, then divide between two champagne flutes.
2. Top with more chilled sparkling, pouring it slowly to avoid overflowing, then serve.
