Marinated mozzarella is an easy-to-make crowd-pleaser. These little bites look (and taste) fantastic on a cheeseboard, but can also be added to your favourite salad.

Approx 5 minutes, plus overnight marinating
Ingredients
500g Alba Mozzarella Cheese
1/3 cup olive oil
1 tbsp sun-dried tomatoes, chopped
1 tsp fresh parsley, minced
1 tsp Pikt & Chopt Minced Chili
1 tsp Pikt & Chopt Minced Basil
1 tsp minced chives
1/2 tsp Pikt & Chopt Minced Garlic
Method
Chop the mozzarella roughly in to cubes
In a container, mix the olive oil, sun-dried tomatoes, parsley, chili, basil, chives and garlic together. Add the mozzarella, stir to coat and seal the container.
Refrigerate overnight so the cheese can absorb all the flavours.
Serve as part of a cheese platter, or mix into your favourite green salad.
