Mushroom & Wild Rice Stuffing (Vegan, Gluten Free)

This juicy stuffing is wonderful for a vegan turkey or chicken alternative and also makes a perfect gluten free turkey or chicken stuffing.

  • 1 cup brown & wild rice blend (or rice and quinoa etc)
  • 2 ¼ cups vegetable stock
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 celery stalks, chopped
  • 2 garlic cloves, minced
  • 220g mushrooms, sliced
  • 3 tbsp fresh chopped sage
  • 1 tbsp fresh chopped thyme
  • 1 tsp salt


  1. Combine the rice and vegetable stock in a large saucepan, cook per rice packet instructions.
  2. While the rice is cooking, heat the oil in a large pan over medium heat and sauté the onion and celery until tender, about 8 minutes. Add in the garlic, mushrooms, sage, thyme, and salt, and sauté for another 8 to 10 minutes, until the mushrooms are tender.
