One Step Orange Cake with Orange Icing

Full of sweet and tangy orange flavour, this is the perfect, bright and cheery, spring time morning tea. Enjoy with a cuppa or serve after dinner with your favourite chocolate ice cream.

Cake Ingredients

  • 125 g butter softened
  • 1/4 cup milk
  • 1/4 cup freshly squeezed orange juice SPECIAL
  • 2 eggs
  • 3/4 cup caster sugar
  • 1 1/2 cups self-raising flour sifted
  • 1 tbs orange zest finely grated

Icing Ingredients

  • 1/3 cup butter softened
  • 1 1/2 cups icing sugar sifted
  • 2 tbs orange juice *to taste
  • 1/2 tsp orange zest finely grated

  • Preheat oven to 180C
  • In a large bowl, combine all cake ingredients and beat thoroughly using an electric mixer for 3 minutes.
  • Pour mixture into a greased 20cm x 10cm loaf or 20cm ring tin.
  • Place in the centre of the oven and bake for 30-40 minutes.
  • Once cooked, (skewer will come out clean when inserted into the middle of the cake), turn onto a wire rack and allow to cool to room temperature.
  • Combine all orange icing ingredients together in a bowl and mix using an electric mixer until smooth.
  • Spread icing evenly over the cake.
  • If desired, sprinkle with a little extra orange zest.
