Pork Loin with Creamy Mushroom Sauce

This recipe makes a delicious mid-week dinner that the whole family is sure to love. Enjoy with veggies and pair with a glass of Chardonnay.

Ingredients

  • 4 pork loin steaks
  • 1 tbs olive oil
  • 1 medium brown onion
  • 2 field mushrooms
  • 2 rosemary sprigs, chopped
  • ½ cup chicken stock
  • 2/3 cup of cream
  • 1 tbs whole grain mustard

Method

  1. In a pan with oil, on medium high heat, brown the pork loins.
  2. Remove from pan and sauté the sliced mushrooms and onion for 3 minutes.
  3. Add chopped rosemary and cook for another 4 minutes.
  4. Add ¼ cup of stock and lightly scrape all of the good bits from the bottom of the pan then add the remaining stock, whole grain mustard and cream.
  5. Add the pork back to the sauce and simmer for 5 minutes or until pork is cooked.
  6. Season the sauce and serve with a side of crispy oven roasted potatoes or creamy mash with beans and broccoli.
