R Stephens Honey Biscuits

This sweet & simple honey biscuit recipe is shared by our friends at R Stephens Apiarists.

  • 125g melted butter, cooled
  • 1/4 cup Golden Bee Honey
  • 1/4 cup castor sugar
  • 1 tsp bicarbonate of soda
  • 3/4 cup shredded coconut
  • 1 cup plain flour
  • 2 tbsp raw sugar


  1. Combine cooled butter, honey, castor sugar and bicarb soda in a bowl, beat until smooth, stir in coconut and sifted flour.
  2. Roll two level teaspoons of mixture into a ball, press one side of the ball into the raw sugar and place sugar side up on a greased oven tray.
  3. Repeat with remaining mixture and raw sugar, spacing biscuits about 3cm apart.
  4. Bake in moderate oven about 10 minutes, or until lightly browned.
  5. Remove from oven and allow to rest on the tray for 5 minutes.
  6. Transfer biscuits onto wire racks to cool before devouring.
