Ratatouille

Ratatouille is one of the most loved vegetable dishes and for good reason. Flavoursome, hearty and healthy, it is great with crusty bread, mixed into pasta, or as a side dish to any meat.

Ingredients

  • 2 large eggplants
  • 3 capsicums, any color
  • 3 zucchinis
  • 2 red or brown onions
  • 2-3 carrots, peeled
  • 3 cloves garlic, crushed
  • 1 tablespoon tomato paste
  • 2 cans diced tomatoes, cherry tomatoes, or Passata
  • Thyme, basil, oregano, Parsley
  • Salt & pepper to taste

Method

  1. Prepare all the vegetables into a large dice.
  2. Heat some olive oil in a large heavy based pot and add the onions. Saute for about 2-3 minutes, then add the crushed garlic, thyme, oregano and tomato paste and gently cook off.
  3. Add the eggplants, capsicum, zucchini and carrots.
  4. Add the canned tomato and slowly cook for 30 minutes, with the lid slightly off. Stir occasionally.
  5. Check seasoning, add chopped parsley and basil, just before serving.

Notes:

  • You can make a huge batch of this and freeze it, it’s great mixed into pasta or used as a side to all meats, chicken, fish, beef, etc.
  • It’s also delicious on its own with some crusty bread.
