Roast Beef with Garlic Butter & Herb Rub

This flavoursome and tender Roast Beef recipe is perfect for celebrating any special occasion with friends and family.

Ingredients

  • 3kg beef roast
  • 1 cup butter, softened
  • 5 cloves garlic, minced
  • 1 sprig fresh sage
  • 1 sprig fresh rosemary
  • 2 medium red onions, quartered
  • Salt and cracked pepper
  • Fresh chopped parsley, for garnish

Method

  1. Remove the beef roast from the refrigerator at least 30 minutes before preparation, to bring it to room temperature. Preheat your oven to 230°C.
    In a food processor, mix butter, garlic, sage, rosemary, 1/2 red onion, salt, and pepper.
  2. Rub all of the butter mixture on the outside of the beef and place in a roasting pan, surrounded with remaining red onion quarters.
  3. Roast for 15 minutes, then reduce the temperature to 160°C. Roast until it reaches an internal temperature of 60°C for medium-rare meat. This will take  approx. 45 minutes to 1 hour (or more, depending on the size of your roast).
  4. Remove the roast from the oven, cover with foil and allow to rest for at least 20 minutes before slicing to let the juices soak back through the meat.
  5. Remove foil, slice, garnish with parsley and serve along with the your favourite cooked veggies.
