Rockmelon & Fetta Salad

A summer salad with the perfect balance of salty and sweet. Perfect as a side to BBQ's or as a picnic salad.

Ingredients

  • 1 ripe rockmelon, cubed
  • 1 lime, zest and juice
  • 1 tablespoon extra virgin olive oil
  • 50g Danish fetta, crumbled
  • 1 tablespoon mint, freshly sliced
  • salt/pepper to taste

Method

  1. Place the cubed rockmelon in salad bowl and sprinkle the crumbled fetta and sliced mint on top.
  2. In a small bowl, mix together the lime and olive oil.
  3. Pour the lime and oil mixture over the rockmelon and toss all ingredients together.
  4. Serve immediately.
