Thyme & Orange Slow Cooker Lamb Chops

This fantastic cut of lamb is perfect when simmered on low for hours in a slow cooker. The aroma is irresistible, and they come out so tender they practically melt in your mouth!

  • 6 lamb chops
  • 3 sprigs of fresh thyme
  • 2 tbs honey
  • 2tbs vegetable oil
  • 1tsp orange zest
  • ½ cup orange juice
  • 2tbs corn starch
  • 1tsp salt
  • Steamed broccolini to serve

  1. Brown the Lamb chops in the vegetable oil, then place on a plate and set aside. In a bowl mix the honey, salt, thyme, corn starch, zest and orange juice.
  2. Pour a small amount of the juice mixture in to the bottom of the slow cooker. Place a couple of the lamb chops in to the cooker, then add more juice, repeating until all of the lamb chops and juicing liquid are in.
  3. Cook on low for 6 – 7 hours.
  4. Serve with a side of steamed broccolini.
