Thyme & Orange Slow Cooker Lamb Chops

This fantastic cut of lamb is perfect when simmered on low for hours in a slow cooker. The aroma is irresistible, and they come out so tender they practically melt in your mouth!

Ingredients

6 lamb chops
3 sprigs of fresh thyme
2 tbs honey
2tbs vegetable oil
1tsp orange zest
½ cup orange juice
2tbs corn starch
1tsp salt
Steamed broccolini to serve

Method

Brown the Lamb chops in the vegetable oil, then place on a plate and set aside. In a bowl mix the honey, salt, thyme, corn starch, zest and orange juice.
Pour a small amount of the juice mixture in to the bottom of the slow cooker. Place a couple of the lamb chops in to the cooker, then add more juice, repeating until all of the lamb chops and juicing liquid are in.
Cook on low for 6 – 7 hours.
Serve with a side of steamed broccolini.
