Valentine’s Day Waffles

What better way to start Valentine's Day than with some festive waffles?! This easy valentine's day breakfast is perfect for kids and adults.

Ingredients

  • 2 cups plain flour
  • 1/2 cup white sugar
  • 1 tsp baking powder
  • pinch salt
  • 4 large eggs
  • 480mls buttermilk
  • 1 tsp vanilla extract
  • 60 g unsalted butter melted

To cook the waffles

  • 60 g unsalted butter for brushing generously onto the waffle iron

Method

  1. Preheat the waffle iron.
  2. In a medium bowl, whisk together all purpose flour, white sugar, baking powder and salt.
  3. In a large bowl, whisk together the eggs, buttermilk and vanilla extract.
  4. Add the flour to the egg mixture and whisk gently until just combined.
  5. Slowly whisk in the melted butter. Like muffins, don’t over mix!
  6. Cover the bowl with plastic wrap or a clean kitchen towel and set aside to rest for 30 minutes.
  7. Before cooking the waffles, melt the extra butter in the microwave in a small bowl. Have ready a heat proof brush.
  8. Brush the hot waffle iron generously with melted butter. This is for flavor as well as ensuring nothing sticks so don’t stick this bit.
  9. Pour some batter onto the hot buttered waffle iron plates and spread it quickly using a spatula.
  10. Close the waffle iron. Waffles will take about 3 minutes each to cook depending on how hot your waffle iron is.
