Zuppa Toscana Soup

Ingredients

  • 1tsp olive oil
  • 4 Bratwurst ( sliced once cooked)
  • 1 large carrot ( peeled and cubed)
  • 1 white onion diced
  • 2 sticks of celery, sliced
  • 3 large potatoes (peeled and cubed)
  • 4 garlic cloves
  • 5-6 cups of veg stock or water
  • 1 cup of cream ( or ½ cup cream, ½ cup milk)
  • Baby spinach or kale to finish

Method

  1. Seal off the Bratwurst in a pot with oil. Remove from the pot and slice. Keep to the side.
  2. In the same pot, gently saute the onion and carrots, add celery and crushed garlic.
  3. Add stock, potatoes and sliced Bratwurst and bring to a simmer. Cook on a medium heat until the potatoes are cooked through.
  4. Just before serving, add cream and a handfull of either fresh baby spinach or kale.
  5. Serve with a slice of crusty artisan bread.
